MANGO SORBET

MAKES 4 SERVINGS
This is a light dessert that’s also rich in vitamins C and A and folate. It’s the perfect refresher on a hot summer day.
INGREDIENTS:
4 cups frozen mango chunks
1 cup coconut water
¼ cup freshly squeezed orange juice
PREPARATION:
1. In a blender or food processor, blend all the ingredients together, scraping down the sides, until smooth.
2. Serve immediately or scoop the sorbet into a freezer-safe container or bread pan, and freeze for a couple of hours to harden.
3. When ready to enjoy, remove the sorbet from the freezer and let sit at room temperature for about 15 minutes to soften before serving.
4. Scoop sorbet into a bowl and enjoy!
