SALT & VINEGAR ZUCCHINI CHIPS
PREP TIME: 5 min
COOK TIME: 20 min
TOTAL TIME: 25 min (or up to 12 hours if prepared in a dehydrator)
MAKES 1 SERVING

Zucchini chips are a healthy alternative to commercial chips. We love preparing these using our dehydrator, but they can easily be made in an oven.

INGREDIENTS:
1 large zucchini
white vinegar, for soaking
dash of sea salt
freshly ground black pepper, to taste

PREPARATION:
1. Preheat oven to 350F.
2. Line a large baking dish with parchment paper.
3. Slice the zucchini into ⅛-inch-thick rounds.
4. In a mixing bowl, submerge the zucchini slices in white vinegar and let them soak for 30 minutes.
5. Pour the vinegar from the bowl and drain the zucchini well. Toss the zucchini slices with sea salt and freshly ground pepper.
6. Bake the zucchini until crisp, approximately 20 minutes. (Monitor the zucchini, because every oven is different.) Enjoy.

NOTE: These chips can also be made in a dehydrator, but would take considerably longer to prepare.
